Bikini Recipe

Yields 10 servings

To make the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Premix (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

To prepare the Cordial: Put all the components into a pan, bring to a light boil, agitating until the sugar dissolves. Next, turn off the stove and leave to cool down fully. Pour into a sterilised bottle, close it and store in the refrigerator, it can be stored for up to a month.

For the Cocktail Base: Mix all the spirits and syrup in a large bottle, let it rest for 60 minutes, then strain preferably using cheesecloth, so it's perfectly clear.

When ready to serve: Pour 85ml of your premix into your stirring glass packed with ice, and agitate gently for a minute to cool it down. Pour to a chilled martini glass or similar, garnish with some cranberries and finish by giving it a light spray of the essential oil over the top.
